And with the help of advanced technology from the electronic cherry coffee sorter, we guarantee excellence and precision in selecting the best beans for each stage.
Our production process begins with pre-cleaning, passing through the washer, where the coffees are separated by density, resulting in the separation of "Buoy and Pass Coffees" from "Cherry and Green Coffees". After this stage, the cherry and green beans go to the electronic sorting hopper, where they are dosed by vibratory feeders, ensuring a controlled and constant flow.
On the conveyor belt, the coffee beans gain speed to be thrown towards the optical unit of the sorter. At this moment, a meticulous analysis of the beans occurs, and any defective bean is immediately identified and removed from the flow through a compressed air ejection. The electronic grain sorter technology is unique, with its high-resolution full-color optical system and an easy-to-configure operating system, providing speed and efficiency in the selection process following the standard defined by the team.
With the grains rigorously selected, the Eldorado Specialty Coffees team has the flexibility to allocate them to various possibilities such as directing them to the husking process in zero-water huskers, ensuring grain integrity and its mucilage. It is also possible to send them, after being pulped, to fully washed fermentation boxes, where the coffee undergoes a controlled fermentation process, resulting in unique and complex flavors. We also have the option of using stainless steel rotary fermenters for fermentation of large batches with total control of parameters such as temperature and pressure or carry out fermentation in vertical fermenters. Another option is to explore the unique characteristics of each batch through fermentations in 200-liter barrels.

An essential point in the search for perfection in our coffees is the drying process, in which we offer a wide variety of options to dry our batches. We believe that these grain drying processes are fundamental to ensuring all their sweet flavor and allowing a continuous process of improvement until they reach the ideal moisture content.
At Eldorado Specialty Coffees, we have different drying methods for each type of batch. Coffees can be directed to our suspended patios, such as peeled, natural, or fermented coffees.
In the case of natural coffees, they are directed to our suspended patios. If they are fermented coffees, the drying process occurs grain by grain for about 4 days. Then, the beans are placed in 15 cm layers and covered with shade nets, remaining for 12 to 15 days until they reach 16% moisture. After this stage, the coffees rest in our warehouses for approximately 15 days, so that there is a cellular water reorganization in the grains. Then, they return to the patios or dryers to be finished and reach 11% moisture.
Eldorado Specialty Coffees today has the largest area of suspended patios in the world, our "Six Stars Hotel of Coffees". Offering each bean all the necessary attention: a slower drying, a better rest with the ideal temperature, in addition to being supervised so that it does not exceed temperatures above 35 degrees.
Drying options do not stop there, Eldorado also has options for drying in conventional patios with thicker layers for specific lots, following the traditional style of gold extraction in mines. In addition, we have the possibility of finishing in rotary dryers.
